Prawn Linguine

Simple, quick to prepare and cooks in 5 minutes. Perfect for those busy days when you crave a filling, fast bowl of Pasta.

I adore Pasta, I could eat it every day, and I do make my own occasionally. Even shop bought fresh pasta is a real game changer, it just seems more velvety, tasty and cooks in a fraction of the time too.

None of the ingredients needs much cooking, just a quick warm- up.

BEB Tip Leave about half the cherry Tomatoes whole for a small explosion of flavour and extra juice as you bite into them.

Fresh Chilli is often used in this type of recipe, but as I am a lightweight when it comes to spicy food I have used lovely fresh Ginger bite, mild heat and freshness. If you like it hot, feel free to add Chilli instead, or both?


Serves Two


Ingrediants

  • 150g cooked Prawns

  • 1 Large Onion-chopped

  • 2 Garlic cloves-thinly sliced

  • 1 Tsp Fresh root Ginger

  • A dozen Cherry Tomatoes-halved

  • A dozen Cherry Tomatoes-left whole

  • 100g Fresh Linguine

  • 2 Tbsp Olive Oil

  • 2 Tbsp Parmesan Cheese

Instructions

  1. Gently fry the Onions and Garlic in half the Olive Oil.

  2. Bring a pan of water to the boil and add the Linguine.

  3. Add the halved tomatoes and ginger to the Onion mixture.

  4. When the pasta is done drain off and add to the Onion mixture.

  5. Add the whole tomatoes and prawns, mix well on high heat just to warm everything up.

  6. Serve while hot and dress with remaining oil and Parmesan.
