
These Easy Peasy Smoked Salmon Blinis are a lovely and light Christmas Day starter. Adding the cucumbers to the sauce makes it so fresh and crunchy. The Salmon and Prawn provide a great dose of Omega 3 oils which have so many important health benefits.
I wasn't sure what to cook for a Christmas day Starter. Due to the Corona Virus it was just to be my lovely Wife Susie and I to cook for. The Turkey would be well under way and I just wanted a simple brunch to enjoy with some bubbles. I remembered making something very similar for last New Years Eve so I decided to do something along those lines.
We ate these about 11ish, washed down with the bubbles, then went for a lovely little walk before opening our presents and enjoying our Christmas dinner about 3 o'clock.

Serves Two
Ingredients
Four ready made Blinis
100g Smoked Salmon, cut into 5cm strips
15cm Chunk of Cucumber chopped into small chunks
1 Tbsp of low fat cream cheese
1 Tbsp of light double cream
Juice of 1 lemon
Four cooked Prawns
Instructions
Pop the blinis in the toaster on lowest setting to lightly toast.
Mix the Cream cheese, Cream, cucumber and Lemon juice together until it is a thickish consistency.
Spread the cream cheese mixture onto two of the blinis.
Add several strips of Smoked Salmon.
Place the other two blinis on top, add more cream cheese mixture and Smoked Salmon.
Finally top each one with two of the Prawns.
