When it’s a cold or miserable day outside lift your spirits and boost your immune system with this fabulous easy to make Winter Warmer Soup, heavy on the Toms, it packs a punch with the ginger and chilli!! And of course serve with great sourdough bread.
Ingrediants (feel free to chuck any veggies you have, this is exactly what I used and it was amazing!)
Serves 3-4 (or two very large bowls!!)
8 medium sized Tomatoes (tennis ball size).-
1 large onion.
1 large carrot.
2 tbsp olive oil
2 head of broccoli.
500 ml water.
2 inch piece of fresh ginger.
2 inch piece of fresh Tumeric.
2 teaspoons of chilli flakes.
Roughly chop all veggies.
Fry the onion and carrot in the olive oil for 5-10 minutes.
Add the rest of the ingredients except the chilli flakes and bring to a boil.
Once boiled reduce heat to low and simmer for another 15-20 minutes.
Pour contents of pan into blender and whizz up until smooth.
BEB Tip Pass contents through a fine Sieve to remove Tomato skins and seeds.
Return contents back into pan and warm through before serving.
Add the chilli flakes, a touch of olive oil and some cream for presentation.
