Wicked Winter Warmer Soup

When it’s a cold or miserable day outside lift your spirits and boost your immune system with this fabulous easy to make Winter Warmer Soup, heavy on the Toms, it packs a punch with the ginger and chilli!! And of course serve with great sourdough bread.


Ingrediants (feel free to chuck any veggies you have, this is exactly what I used and it was amazing!)


Serves 3-4 (or two very large bowls!!)


  • 8 medium sized Tomatoes (tennis ball size).-

  • 1 large onion.

  • 1 large carrot.

  • 2 tbsp olive oil

  • 2 head of broccoli.

  • 500 ml water.

  • 2 inch piece of fresh ginger.

  • 2 inch piece of fresh Tumeric.

  • 2 teaspoons of chilli flakes.



Method


  • Roughly chop all veggies.

  • Fry the onion and carrot in the olive oil for 5-10 minutes.

  • Add the rest of the ingredients except the chilli flakes and bring to a boil.

  • Once boiled reduce heat to low and simmer for another 15-20 minutes.

  • Pour contents of pan into blender and whizz up until smooth.

  • BEB Tip Pass contents through a fine Sieve to remove Tomato skins and seeds.

  • Return contents back into pan and warm through before serving.

  • Add the chilli flakes, a touch of olive oil and some cream for presentation.
